Born in Cali, Colombia, Chef Vic was raised in a city where culture is felt through rhythm, flavor, and celebration. Surrounded by the sounds of salsa, bongos, and timbales, he developed an early appreciation for the experiences that bring people together. For Vic, food and music have always spoken the same language—both have the power to create emotion, inspire connection, and leave lasting memories.
Driven by that passion, Vic pursued a career in hospitality that would span nearly two decades. From culinary school to leadership positions with nationally recognized restaurant groups, he built his reputation through concept development, restaurant openings, culinary leadership, and a relentless commitment to excellence. Along the way, he learned that great restaurants are not built on food alone, but on the harmony between hospitality, atmosphere, design, and human connection.
Yet throughout his journey, Vic felt that Latino culture was too often viewed through a limited lens. He believed there was another story to tell—one that celebrated its creativity, sophistication, craftsmanship, and influence on the world.
That vision became D’Rose Gastrobar.
Today, Victor leads D’Rose with a simple mission: to challenge expectations and create experiences where food, music, design, and hospitality come together as one expression of modern Latino culture.
